Wild Ramps! How is everyone preparing theirs?
Tonight I chopped some of the green leaves, added some olive oil, a touch of brown rice vinegar, soy sauce and agave. I tossed it all with a sliced cucumber. A tasty asian inspired salad.
These wonderful little gems are entirely edible, with a small amount of work that is.
1.) Peel away some of the outer leaves until you can start to see some yellow/light green.
2.) Peel a layer and trim the stem.
3.) Slice off the top, about 1/4 inch or so.
4.) Slice in half.
Now the chokes are ready for steaming. Steam for 10-15 min. Then you can grill, saute or just toss with butter and salt.

What did you do with your share this week? I insisted on the Chocolate Zucchini Cake recipe being included this week. I highly recommend a thick rich fudge frosting though instead of the glaze. Those who know me know what I am talkin’ about!

I am still mowing through the cabbage from last week. I LOVE cabbage- and have made ham and cabbage soup, japanese yaki-soba, curried coleslaw and also just sauteed it with some olive oil and soy sauce. -Melanie

I ate the strawberries right away with some whipped cream, and ate the greens for supper. I can’t wait to try some of the recipes this week. In particular, I am going to try the Penne with Ricotta and Asparagus.

What did you do with your share this week? Last week I made a dip out of my celery root and served it at a party and everyone wolfed it down, didn’t even ask what it was it was so good!
Celery Root Dip
1 celery root - shredded
1 cup fresh spinach
1 cup chicken or vegetable broth
1/2 cup prepared hummus
1/2 cup sour cream
1/2 cup shredded monterey jack cheese
Cut the skin away from the celery root and shred. Combine shredded root, spinach and broth in saucepan and cook over medium heat until root is tender and spinach is wilted- about 15 minutes. Puree in blender or food processor until smooth. Return to saucepan and add remaining ingredients. Heat until cheese melts. Serve with chips, crackers or veggies.
You wouldn’t have to add hummus if you don’t have it. I only did because I had some and I knew the hummus had garlic in it. You could try just adding garlic or onions alone. The hummus did help though with the consistency though.
